Diabetic-Friendly Chickpea Salad

Looking for the perfect dish with dinner tonight? Try this delicious chickpea salad as a side or snack for great blood sugar control! This well-balanced meal contains all the key components for great blood sugar control--carbohydrates paired with healthy fat (unsaturated fat), fiber and protein.
CHICKPEA SALAD
INGREDIENTS
- 1 – 15.5 oz can garbanzo beans (chickpeas)
- 1 large English cucumber
- 1 – 10 oz container Cherry Tomatoes
- 1/3 cup crumbled Feta Cheese
- 4 TBSP Balsamic vinaigrette
- Salt to taste
- Ground Black Pepper to taste
DIRECTIONS
- Drain and rinse garbanzo in a strainer
- Slice English cucumber into bite size pieces
- Cut cherry tomatoes in half
- In a large mixing bowl, combine chick peas, cherry tomatoes, cucumber, feta cheese and balsamic vinaigrette
- Salt and pepper to taste
- Mix all ingredients
- Serve cold and ENJOY!
